The Fermentation ShelfNotebook / Beet kvass

Seven days
in red.

A jar of beets makes a slow, visible record. Color leaves the cut edges, clouds gather, small bubbles find the glass. This is a notebook about paying attention.

Day 1 / observation

The first cut.

Firm cubes, sharp edges. The liquid is almost clear; the color still belongs to the beet.

Day 2 / observation

Color escapes.

A pale pink halo gathers around each piece. By evening, the outlines begin to soften.

Day 3 / observation

A little cloud.

The red is no longer transparent. A few fine bubbles cling beneath the shoulder of the jar.

Day 4 / observation

The deep middle.

The whole jar now seems to hold one color. A ring of tiny bubbles collects near the top.

Day 5 / observation

Edges disappear.

The pieces are silhouettes in a red-purple field. Sediment makes a thin line at the bottom.

Day 6 / observation

A quieter surface.

Fewer bubbles are visible in this imagined batch. The liquid looks darker against the window.

Day 7 / observation

The last page.

A final sketch, not a verdict. The record ends with the color, the light, and one more question.

Select a jar to open its field note. This is an illustrative observation journal, not a recipe, a readiness guide or a record of a real batch. A photograph cannot establish food safety.
